Ventilation is the appliance people notice least until it stops, and it is the one most often defeated by the house rather than by itself. A professional hood over a professional range in a Mandarin kitchen built in the 1970s is frequently connected to ducting that was sized for something much smaller.
A blower that spins at full speed while a tissue held at the edge of the hood barely moves is almost never a motor fault. Air has to leave the building, and the path it takes decides how much of the blower’s rating you actually get.
The things that reduce it are all cumulative: duct diameter smaller than the hood outlet, flexible duct instead of smooth-wall, every ninety-degree elbow, long horizontal runs, a crushed section where the duct was pushed through a soffit, and a termination cap with a screen that has filled with grease and lint. In an older kitchen where the hood was upgraded but the duct was left alone, all of those are usually present at once.
The other half of the problem is make-up air. A high-capacity hood cannot exhaust air the house has no way to replace, and many jurisdictions require a make-up air provision above a certain airflow for exactly that reason. In a modern, tightly built house the hood will simply stall against its own vacuum. In an older house it will pull replacement air down whatever else is open, which is its own set of problems.
We measure what we can and describe honestly what is duct and what is appliance. A blower motor fitted to a duct problem is money spent on the wrong component.
A hood that has become much louder at the same setting is usually telling you about its wheel. Grease builds unevenly on the blower wheel, it goes out of balance, and the noise rises long before anything fails.
The other sources are a wheel that has loosened on its shaft, a motor whose bearings have dried out, and duct sections that have separated and are now vibrating against a joist. All four are audible differences to a trained ear and they lead to different repairs.
A blower that hums but does not turn is usually seized rather than dead — a motor that has been sitting through a humid summer, or a wheel jammed by hardened grease.
Baffle filters work by making air change direction sharply so grease is thrown out of the stream and drains to a channel. They only do that if the baffles are clean and correctly seated. A dishwasher run every few weeks keeps them working; a set that has not been washed in a year is both a performance problem and a fire load directly above a professional range.
We check the seating too. Filters put back in the wrong orientation leave a gap that lets air bypass the baffles entirely.
Air coming down through the hood on a windy day means the backdraft damper is not closing. Either the flap is fouled with grease, the counterweight has been lost, or the damper at the wall cap has stuck open. It is a small part with a big comfort effect, and in this climate it also lets humid outside air into a conditioned kitchen all summer.
Speed controls fail one position at a time, which points at the switch rather than the motor. Lamp positions that flicker are usually holders that have corroded or loosened rather than lamps that are failing. On a remote-blower installation, where the motor is mounted in the attic or on the roof, the wiring run between control and blower is long enough that a connection fault at either end presents as an intermittent hood.

The hood rattled so badly at top speed that we had stopped using it. He balanced the blower, replaced a perished mount and tightened the duct collar. It is quiet enough now to run through a whole dinner.

Airflow improved once the baffle filters and the motor were dealt with, but the ductwork fault he found is ours to sort with a builder. He was straight about that rather than taking on work he could not finish.
